The ceramic sharpener is the perfect tool to keep your Japanese knives sharp. Ceramics are characterized by exceptional hardness that can easily process hard steels.

This massat is ideal for Yaxell knives but can also be used for other knives made of similar steel. It features an extremely smooth working surface that is very gentle on your delicate Japanese blade, treating it just enough to restore its sharpness.

Method of use: Ceramic massat is used by placing the blade of the knife against the massat at an angle of 15 degrees, and then gently moving the entire blade over the surface of the massat. It is preferable to move the knife in the direction of the blade, although other methods of using massat are generally accepted.

Attention: A completely blunt knife cannot be sharpened on ceramic massat, but it is used as a tool to maintain the sharpness of the knife. With proper and regular use, you can significantly extend the life of your knife's sharpness. Professionals use masata up to several times during a work shift, while for home use 2-3 times a week is enough if you cook regularly.

Note: Do not drop the masat because the ceramic is fragile.

    Sharpening Japanese knives

How to choose the first Japanese knife?

If you are buying your first Japanese knife, the advice is to choose a multifunctional blade shape that will cover the widest range of your needs in the kitchen. This includes Gyuto, Santoku and Bunka. The rule is that bigger people need bigger knives and vice versa.

Japanese knife as a perfect gift

Although in the culture of the Far East it is not recommended to give a blade as a gift because of the connection with cutting off good relations, they also could not resist the perfection of such a gift, so they devised a "trick" that allows them to gift knives without problems. Just ask for one coin from the person receiving the gift and in the eyes of strict superstition spirits it will be a fair exchange. Now no joke, a knife is a gift that unlike other transient things will be remembered forever because it will serve forever.
