Prince Kogyo - deep frying pan 24cm
Carbon steel pans are coming back into fashion and becoming a favorite to work with. They are lighter than cast iron and easier to maintain, but much more robust than non-stick pans. They're great for cooking specific foods like skin-on fish, fried rice, eggs, and anything else that sticks to your pan. The Prince Kogyo pan is exactly what every household needs because after the first use it will become a favorite and replace all other pans. With proper use and maintenance, the quality of food preparation will be better and better. The diameter of this pan of 24 cm is extremely convenient for every household, and its depth allows you to prepare larger quantities of food in it if you wish. This pan is very similar to a wok style pan and can be used just like a wok.
Material: high carbon steel
Weight: 870g
Dimensions: 400mm x 240mm x 130mm
Advantages of carbon steel pans: Steel is a material that is resistant to high temperatures and has good thermal conductivity, which makes it the perfect material for pans. For this reason, it is suitable for cooking at high temperatures in a short period of time, sealing the taste of the ingredients and making the dish very tasty. The more you use it, the more oil it will absorb and won't stick, making it durable and long-lasting. However, although steel is an ideal material for pans, it has its weaknesses, that is, it rusts easily. This requires seasoning your pan before use.
Pan maintenance: Like all carbon steel pans, Prince Kogyo pans can rust. To prevent this, avoid submerging them in water for a long period of time and dry them well after washing. Season them by heating them on medium or low on the stove for 10 minutes. Add 4 tablespoons of vegetable oil or lard and stir to evenly coat the surface of the pan. Reduce the heat and let it sit for 3 minutes. Pour off the excess, wipe the entire surface of the pan with a paper towel and let it cool. For best results, we recommend that you repeat the seasoning process 3 times before use.
Note: Do not wash in the dishwasher.
Do not place this pan in the oven without first removing the handle. The handle is very easy to remove with the help of an Allen key.
For glass plate users: due to the uneven heat produced by glass plates, carbon steel pans can warp from the extreme concentration of heat. They can be used on glass, but heat them up slowly. Do the seasoning process in the oven, not on a glass plate.

If you are buying your first Japanese knife, the advice is to choose a multifunctional blade shape that will cover the widest range of your needs in the kitchen. This includes Gyuto, Santoku and Bunka. The rule is that bigger people need bigger knives and vice versa.

Although in the culture of the Far East it is not recommended to give a blade as a gift because of the connection with cutting off good relations, they also could not resist the perfection of such a gift, so they devised a "trick" that allows them to gift knives without problems. Just ask for one coin from the person receiving the gift and in the eyes of strict superstition spirits it will be a fair exchange. Now no joke, a knife is a gift that unlike other transient things will be remembered forever because it will serve forever.
