This special knife from the Tojiro company, which is also called the ITK series, has proven to be an excellent choice for both professional chefs, bakers and hobbyists.

The main feature of this knife is the wavy edges, which are quite specific and suitable for use on different types of food. The cutters are just so "aggressive" that they easily cut through softer pastries and yet have no problem with bakery products with a harder crust. In addition to the above, you can use this knife to cut vegetables (it is especially effective for tomatoes and eggplants) or cut roast meat.
The longer 270mm blade will have no problem with any challenge that comes your way in the kitchen!

MV Stainless steel is actually an alloy to which a significant amount of molybdenum and vanadium has been added, thus improving its hardness, wear resistance and ability to hold the blade in extremely difficult conditions.
This knife will stay sharp for a very, very long time.

The handle is made of extremely strong mirkata with very comfortable edges, which ensures a safe and pleasant grip even during prolonged use of this knife.
All in all, this specimen is a unique and extremely useful knife!

How to choose the first knife?

If you are buying your first Japanese knife, the advice is to choose a multifunctional blade shape that will cover the widest range of your needs in the kitchen. This includes Gyuto, Santoku and Bunka. The rule is that bigger people need bigger knives and vice versa.

Japanese knife as a perfect gift

Although in the culture of the Far East it is not recommended to give a blade as a gift because of the connection with cutting off good relations, they also could not resist the perfection of such a gift, so they devised a "trick" that allows them to gift knives without problems. Just ask for one coin from the person receiving the gift and in the eyes of strict superstition spirits it will be a fair exchange. Now no joke, a knife is a gift that unlike other transient things will be remembered forever because it will serve forever.
